Potluck Pick: Ulu Mash

Got an ulu but don’t know what to do with it? You can use ulu, or breadfruit, as a substitute for potato in stews, soups, and salads.

Or make ulu mash. It’s a tasty alternative to mashed potatoes.


2 ulu

1 Tbsp. coconut oil

1 onion, finely diced

3 cloves garlic, finely diced

½ block butter, soften

½ cup low-fat milk, heated

½ tsp. salt

¼ tsp. pepper


Wash ulu and pat dry. Cut or peel off skin. Slice in half and remove core. Dice ulu into cubes.

Place in a pot and fill with water until just about covered. Bring to a boil. Cook until soft.

Meanwhile, heat oil in a nonstick skillet over medium heat. Sauté onion and garlic until soft, stirring occasionally.

Drain ulu, reserving about 1 cup water.

Mix onion with ulu and add butter, milk, salt, and pepper. Mash until smooth. If it’s too thick, gradually add reserved water, as needed.
